Dear Joe,
  I suspect that you could get Matlab, Mathematica, or similar
tools to plot this type of data. Gnuplot might even do it nicely.
Plot it as a "height field", a 3-D surface plot of sorts...
I haven't done it, but I can't imagine that it would be too hard to
accomplish in one of those three programs I mentioned, as I believe all
three have mechanisms for this.
